We all have those favourite camping recipes, whether it’s a hearty warm soup or a one pot pasta dish. We know that when it comes to camping from a tent, portability and ease are key, after all nobody likes carrying heavy cooking equipment  or having to sit making a complex dish in the pouring rain! Here at Khyam we like to make your life a little easier, so here’s 3 of our favourite easy camping recipes for you to try this Spring!

Scrambled Egg Croissants

A camping breakfast doesn’t have to mean grabbing an easy cereal bar and heading on your way. If you’re planning a day of adventures you’re going to need a good breakfast - it’s true what they say, breakfast is the most important meal of the day!

Scrambled eggs are a family favourite, and exceptionally easy to make whilst out camping! They take only 5 minutes to make and hardly any prep time. Here’s what you are going to need:

  • Fresh butter croissants
  • 4 eggs
  • 100g grated cheese
  • A splash of milk
  • 1 bowl
  • 1 pan

The ingredients can be bought before heading out on your trip, keep the milk cold in an ice cooler and your croissants fresh in resealable containers - also make sure not to squash your croissants when packing!

To make this delicious breakfast follow these simple steps:

  1. In a bowl, whisk the eggs, cheddar, milk and some seasoning.
  2. Pour into a saucepan and heat gently, stirring continuously, until softly scrambled.
  3. Split open croissants and put the scrambled eggs inside.

One-Pan Spring Eggs

Looking for something exceptionally easy but tasty? Look no further! Eat this easy recipe at any point of the day, it’ll be tasty right through from breakfast until dinner. It’s a vegetarian favourite and one that you can easily make at any campsites, it’ll only take about 15 minutes to prep and cook so you’ll have plenty of time for fun. The best part? You’ll only need one pan, so you’ll have minimal washing up to do after! All you’ll need is:

  • 1 tbsp olive oil
  • 400 courgettes chopped into small chunks
  • 1 crushed garlic clove
  • 200g of halved cherry tomatoes
  • 2 eggs

Once you’ve got all of your ingredients together you’ll want a stove to place one pan on. The pan can be any style! Once your pan is hot, follow these simple steps:

  1. Heat the oil in a non-stick pan, then add the courgettes.
  2. Fry for 5 mins, stirring every so often until they start to soften, add the tomatoes and garlic, then cook for a few minutes more.
  3. Stir in a little seasoning, then make two gaps in your mixture and crack in the eggs. Simply use the side of the pan to crack the eggs!
  4. Cover the pan with a lid or a sheet of foil, then cook for 2-3 minutes until the eggs are done to your liking!

And voila! Within 15 minutes you’ll have an easy one pot meal ready to go, simply serve onto plates and you’re done. Got a little extra room in your camping larder? Throw in some crusty bread, it’ll taste delicious with this dish!

Chickpea, Chorizo and Spinach Stew

Looking for something that’s going to fill you up and warm you up after a long day? If so, this stew is perfect. It’s easy enough to make and will only take you about half an hour to prep and cook! We promise everyone will have a smile on their face after this tasty dinner! To make this stew you’re going to need:

  • 1 chopped onion
  • 3-4 tbsp of olive oil
  • 2 chopped garlic cloves
  • 1 diced carrot
  • 200g of chorizo
  • 1 tsp of paprika
  • 1 diced celery stick
  • 2 bay leaves
  • 2 can of chickpeas
  • 1-2 tsp of sherry vinegar
  • 400g of spinach

Once you’ve got all of these ingredients together and ready to go simply follow these steps:

  1. Heat the oil in a large pan, then gently fry the onion for 3-4 mins until it begins to soften.
  2. Stir in the carrot, celery and bay leaves.
  3. Add the garlic, chorizo, cinnamon and smoked paprika.
  4. Gently fry until the vegetables soften and the chorizo starts to release its oils and crisp up
  5. Stir in the chickpeas, vinegar and 150ml water, then bring to a simmer for 1-2 mins until the chickpeas have heated up.
  6. Add the spinach, then stir through the chickpeas until it wilts a little.
  7. Remove from the heat, season to taste, then serve warm.

In seven simple steps you’ll have yourself a hearty stew that’ll fill you up and keep your tummy happy for the rest of the night!
